golden chicken with salted egg yolk

Ingredient:
2 chicken whole legs
2 slated egg yolk (steam shredded)
5 chilly padi
3 pips garlic (chopped)
some curry leave

Marinade:

1 egg
1/2 tsp fine salt
1 tsp white sugar
1 tsp chinese cooking wine
1 tbsp tapioca flour

Seasoning:

110 ml evaporated milk
1/3 tsp fine salt
1 tbsp white sugar
2 tbsp butter (use as oil)

For coating (Mix together)
100 g tapioca flour
50 g plain flour
