Golden Yam Ring

Indredients:
300g Yam (Bing Rang)-Taro
60g wheat starch
60g shortening
1tsp bicarbonate of soda
1tsp salt
1tsp sugar
1tsp five spices powder
1/2tsp pepper
about 80ml boiling water

Method:
1. peel the yam and cut into pieces. steam it over high heat until cooked and soften.Dish up, mash it into yam paste while still hot. keep asid.

2. Stir in boiling water into wheat starch a bit at a time, until form a dough.

3. Combine the yam paste with the wheat starch dough,shortening and the remaing ingredients on a flour table, knead until to form a yam dough.

4. Make the yam dough into a ring, put on the bomboo rack. Deep fry with covered hot oil over medium heat until golden brown and crisp. Remove from heat,drain well and ready to serve.

Prawn Ball

Ingredients A

300g minced pork
150g mackerel meat
10pcs water chestnuts
1 pc carrot(chopped)
3 tbsp chopped spring onion
150g prawns
150g cuttlefish

Indgredients B

200g biscuit crumbs
150g self raising flour

Seasonings

some salt
1tsp pepper
2 egg white
1tsp sesame oil
1tsp five spices pwoder
3tbsp tapioca flour
1/2tbsp chicken seasoning
some sugar

Method

1.Blend minced pork, mackerel meat,prawns and cuttlefish in blender. chop water chestnut,carrot and onion. Mix ingredients B everly.

2.Mix ingredients A and seasonings evenly, form meat balls and coat with ingredients B.

3.Heat up oil in pot, fry the meat balls until golden brown. serve.

香橙小蛋糕

材料1
牛油 : 150g (切小块)
奶油芝士 : 50g
黄糖 : 180g

材料2
全蛋 : 3粒(180g)

材料3 (把粉类过筛后, 与橙皮拌均)
蛋糕面粉 : 200g
发粉 : 1tsp
腌制甜橙皮 : 50g

材料4
鲜奶 : 50g
Orange flavour : 1tsp

方法
1) 把材料1放进搅拌钢, 用中速搅均
2) 加入第1粒蛋拌打均匀后, 才加入第2粒蛋, 依法把蛋加完
3) 改用低速, 把材料3和材料4, 分3次交替加入拌均成粉糊

材料1三层肉 : 300g材料2 (全部搅烂)虾米 : 50g (洗净)葱头 : 4粒 (去衣, 洗净)蒜头 : 4粒 (去衣, 洗净)材料3面 : 300g菜心 : 200g (洗净, 切段)方法1) 把三层肉洗净, 川烫过, 放进锅内, 加水1.5 litre 煮20分钟, 捞起,切片待用, 保留汤水做为上汤2) 以中火烧热3汤匙油, 投入已搅烂的材料2 充分炒至香熟3) 加入肉片炒均4) 加入上汤煮开5) 加入面和菜心, 盖上锅盖, 焖煮约10分钟至面熟软即可
